Tahini Cacao Chip Paleo Cookies
Paleo cookies? Yes. Made with coconut sugar, almond butter + cacao chips! SOOO good. I love how melted almond butter tastes - along with a hint of tahini to make them savory + then add some cacao. Yes, I'll take 6 of them.
AND it's such a simple recipe. I love how everything is measured in 1's - easy to remember.

Tahini Cacao Chip Paleo Cookies
1 cup almond butter, mixed up if separated
1 cup coconut sugar
1 heaping tablespoon tahini
1 egg
1 teaspoon baking soda
1 teaspoon vanilla extract
1 cup cacao chips
Preheat your oven to 350F. Prepare a baking sheet with parchment paper + set aside.
In a medium mixing bowl, add all the ingredients together. Mix with a wooden spoon or rubber spatula. **The batter will be more moist than regular flour filled cookie dough. Make sure to mix the batter thoroughly - you don't want chunks of almond butter.
Using a small spoon or scoop - scoop the batter onto a baking sheet pan. Space them about 2-3 inches apart. Using your fingers, press the cookie balls down slightly - this is an important step.
Bake for 8 minutes and remove from oven. Let cool 1-2 minutes on the baking sheet, then transfer to a cooling rack.
