Slow Cooked Peruvian Lime Beef

Who else can't live without their slow cooker or instant pot? I mean, seriously. Such time savors and life or dinner savors. Often when I'm freaking out at 3pm with no dinner plans - my Instant Pot comes to the rescue.

Other times, when I have my sh&* together - I put it all in my slow cooker in the morning on low for 6-8 hours while I go about my day - and then my house smells amazing, like I've been actually cooking all day - nope, just my slow cooker. Thank you!

Slow Cooked Peruvian Lime Beef

1-2 lbs Beef Shoulder Roast

1 teaspoon each salt & pepper

1 teaspoon cumin

1 teaspoon mild chili powder

1 teaspoon smoked paprika

1/2 teaspoon turmeric

1 teaspoon dried mexican oregano

2-3 garlic cloves, chopped

zest from 1 lime

1 cup beef stock

1 large onion, sliced

2-3 limes, quartered

* Optional: top with 1/2 cup chopped cilantro

Salt and pepper the beef shoulder roast on all sides. Place in slow cooker. Add cumin, chili powder, smoked paprika, turmeric, mexican oregano, garlic, lime zest and beef stock. Cook for 6-8 hours on medium/low. The time will depend on your slow cooker. You can turn it to high for less time.

Saute sliced onion in sauce pan with a small amount of cooking oil. Shred beef with forks and mix in onion, limes and cilantro. Serve hot!

Great over rice, cauliflower rice, in a tortilla with salsa or on a sandwich. Can be frozen for another time.


*I have cooked this in my Instant Pot as well. It cooks in less than 1 1/2 hours.
