Simple Vine Tomato Bruschetta
Sharing my favorite summer time appetizer today. It's the easiest recipe you will ever follow - seriously! These are the flavors of the season. You can't get any more fresh + seasonal in these beginning days of summer, than with tomato, garlic + basil...and olive oil + balsamic vinegar.
I love adding apple cider vinegar - adds a bit more tang + brings out more of the natural tomato flavors. You can certainly leave it out, if you prefer.
As we count down the days until we harvest our own tomatoes - I've been picking up amazingly ripe at the farmers market - I love all the colors!
Tip: You can use any kind of tomato you like. I love using heirloom tomatoes - yellow + deep purple + red, give it so much more color + texture.
Serve this with crostini or fresh bread...BUT it's also amazing on top of grilled chicken or salmon.

Simple Vine Tomato Bruschetta
1/3 cup high quality olive oil
1/4 cup balsamic vinegar
1/2 teaspoon apple cider vinegar
4 tomatoes (roma, beef steak, vine on or heirlooms work great), diced
1 large pinch each salt + black pepper
1 large garlic clove, minced
1/2 cup fresh basil, chopped
In a mixing bowl, combine all ingredients with a spoon.
Let sit for at least 15 minutes before serving - the flavors development more.
Serve with crostini, crackers, pita chips + fresh bread.
