Simple Balsamic + Dijon Garlic Grilled Steak with Grilled Green Tomatoes

You guys, some times SIMPLE is BEST. Like, when you have less than 30 minutes to think of what's for dinner PLUS making it in even faster time.

Recently, I have about 22.5 minutes to make dinner. Like from start to finish. Yeah, right. Enter this steak. Quick marinade - like the time it takes my grill to heat up, grill + dig in. It's perfect.

Balsamic vinegar does wonders - along with garlic, dijon mustard, olive oil, salt + pepper - so much flavor. Let the grill do it's job. Let the steak rest for 5-10 minutes + we eat.

Simple Balsamic + Garlic Steak

1 tri tip steak, room temperatue

1/4 cup balsamic vinegar

1/4 cup olive oil

3 garlic cloves, chopped

1 tablespoon dijon mustard

1/2 teaspoon salt, plus more for seasoning

1/2 teaspoon pepper, plus more for seasoning

2-3 heirloom green tomatoes, quartered

Heat your grill to high heat.

Pat your steak with a paper towel + place on a plate or baking tray. Combine the rest of the ingredients in a small bowl. Pour over steak + flip over several times to coat both sides of the steak. Let sit until the grill is heated to high heat.

Place steak on the grill + let cook for 6 minutes or until charred, with the lid of the grill closed. Flip over + cook for the remaining time - varies based on how you like your steak. I cooked mine for another 6 minutes.

Add the green tomatoes to the grill after you flip the steak + grill until you remove the steak.

Remove from the grill + let sit before slicing into.

Serve with baked potatoes, green tomatoes + any fresh herbs you have on hand.
