Saucy Peanut Ginger String Beans with Cashews

If you don't like peanut butter - LOOK AWAY. But if you DO - you will LOVE these.

The green beans are crunchy + charred..all coated in a luxurious peanut, ginger + shallot sauce (that takes no time to make, btw). Red pepper flakes, soy sauce + sesame oil - just make it over the top. Don't forget the sesame roasted cashews on top...along with sesame seeds + garlic. It's that good.

Saucy Peanut Ginger String Beans with Cashews

Recipe inspired by Ambitious Kitchen

1 tablespoon sesame oil (toasted or regular)

1/2 cup raw or roasted cashews

3/4 lb. green beans, clean + trimmed

1 shallot, sliced

garnish with scallions, cilantro, and/or red pepper slices

Using a heavy duty pan (a pan that heats evenly works best), heat the sesame oil over medium/high heat.

Add in the cashews + toast to coat in the oil. Let sit for about 30 seconds + toss in the pan. Once few of them start to brown, remove them from the pan + set a side.

Add in the shallots + green beans. Saute them for 6 minutes or until they are charred + slightly tender. Turn the heat down to low. Add in the peanut ginger sauce.

Using tongs mix the sauce + green beans together. If the water, quickly evaporates, add in more water (in 2 tablespoons portions). The sauce should thicken + coat the green beans. Cook for 2-3 more minutes.

Serve with the toasted cashews, fresh cilantro, scallions + red peppers (if desired).


Peanut Ginger Sauce

1 tablespoon coconut aminos or liquid aminos (soy sauce works too)

1/2 tablespoon toasted sesame oil

1 1/2 tablespoons high quality peanut butter (I love Justin's)

1 tablespoon chopped fresh ginger

1 teaspoon coconut vinegar or rice wine vinegar

1/4 teaspoon red pepper flakes

1/4 teaspoon sesame seeds

1/2 cup (or more) water

In a small bowl, mix all the ingredients together - don't worry if the peanut butter + water aren't incorporated fully together - this will happen once it goes into the pan.
