Quick Sesame Sweet Potato + Garlic Ginger Ground Beef Noodle Bowls
As you may know, I'm a sucker for Asian/Thai fusion meals. The salty combinations with vegetables, meat + tons of fresh ginger + cilantro. I'll always choose.
Plus I have been looking for new ways to use ground beef. Ever since getting a large shipment from Five Marys Farms full of ground beef - I always thought about burgers...but not now. And now this recipe. It's a good one.
I love meals like this. AND when the ginger + garlic are barely cooked it packs some serious flavor. Garnished with cilantro + scallions - always good to add some greens in there.
For the noodles, I used fresh Japanese Style Noodles but Udon, Ramen or Lo Mein noodles would be great too!

Quick Sesame Sweet Potato + Garlic Ginger Ground Beef Noodle Bowls
3 tablespoons sesame oil, divided
2 medium sweet potatoes, diced
2 shallots, sliced
salt + pepper
1 lb grass fed ground beef
2 carrots, peeled
2 tablespoons fresh ginger, minced
3-4 garlic cloves, chopped
1/2 cup tamari
1 tablespoon rice vinegar
2 tablespoons fish sauce
3 tablespoon honey or brown sugar (or split it in half with both)
2 tablespoons garlic chili paste
1 tablespoon sesame seeds
1/2 teaspoon chili flakes
1/2 cup fresh cilantro, chopped
2 scallions, chopped
1 package of noodles (use any kind that you love), cook according to package.
Preheat your oven to 425F.
Using a sheet tray, combine 1 tablespoon sesame oil, sweet potatoes, shallots, 1 pinch of salt + pepper. Roast for 10 minutes or until the sweet potatoes are browned + cooked through. Remove from oven + set aside. Turn your oven off.
Using a large heavy duty pan (like a cast iron), heat 1 tablespoon of sesame oil over medium/high heat. Add the ground beef + cook until browned + fully cooked. Add the peeled carrots + turn the heat off.
While the beef cooks, make the sauce. In a small mixing bowl, combine the ginger, garlic, tamari, rice vinegar, fish sauce, honey or brown sugar, garlic chili paste, sesame seeds + chili flakes.
When the ground beef is finished cooking, add the sauce and combine. Turn the heat off and let sit.
To serve, combine the noodles, sweet potatoes + ground beef mixture. Garnish with cilantro + scallions.
