Pomegranate Maple Roasted Acorn Squash

Pomegranate Maple Roasted Acorn Squash


2 tablespoons cold butter, sliced

1 acorn squash, sliced and seeds removed

1 shallot sliced

3 tablespoons pomegranates (or ½ of a whole one)

2 teaspoons Lemon zest

2 tablespoons real maple syrup

Salt & pepper

Preheat oven to 425 degrees.


Add everything to a sheet pan. I like adding the acorn squash first and adding everything else on top of it. Make sure that the squash is equally spread out – you may need 2 pans.


Put the pan in the oven for 15 minutes. Remove and service right away! SOOO good!
