Peanut Chicken Lettuce Wraps with Sweet Chili Peanut Crunch

A perfect weeknight meal - so quick + simple to put together. It's hot + on the table for everyone to enjoy in less than 10 minutes.

Saucy chicken with creamy peanut butter + tons of scallions - ALL tops with chili peanut crunch. Love the texture of the crunch lettuce + peanuts with the saucy chicken + freshness from the scallions. It's a good one.

When my youngest daughter requests a certain dinner WELL you MAKE IT! She is becoming more + more adventurous at the dinner table so I have been jumping at chances to make meals that she will eat - without picking + choosing...or pushing things around on her plate....she loves these lettuce wraps SO much!

Peanut Chicken Lettuce Wraps with Sweet Chili Peanut Crunch

1/2 roasted + salted peanuts

1/3 cup sweet chili sauce

1 tablespoon coconut oil

1 lb. ground chicken (I used Covey Rise Farms ground chicken)

1/2 yellow onion, small diced/minced

2 tablespoons fresh ginger, rough chopped

2 tablespoons coconut aminos

2 tablespoons soy sauce

1 teaspoon tapioca powder (or arrowroot flour)

4-6 scallions, chopped

1 heaping tablespoon peanut butter

1 head iceberg lettuce, torn into cups

serve with hot sauce

To make the Sweet Chili Peanut Crunch, preheat your oven to broil + place the peanuts + sweet chili sauce on parchment paper on a sheet tray. Broil for 2-4 minutes or until the sauce is bubbling. Remove from the oven + let cool.

Heat the coconut oil in a heavy skillet over high heat. Add in the ground chicken + yellow onion. Using a wooden spoon, break up the pieces of chicken so they are smaller bite sized pieces, while it cooks.

When the chicken is almost fully cooked, add in the fresh ginger + finish cooking. Turn the heat off + stir in the coconut aminos, soy sauce, tapioca powder, scallions + peanut butter. Make sure the peanut butter melts + everything is well combined.

To serve, place the lettuce cups on a plate. Soup some of the chicken mixture into each cup. Top with some of the sweet chili crumb. Serve with hot sauce.
