Our Favorite Chili Lime + Honey Grilled Chicken Thighs
Like you need another grilled chicken recipe...BUT heck, I'm posting it. The flavors are crazy good + simple to pull together. Boneless thighs have great meat, moisture + hold on to a good rub on the grill. PLUS, it's super affordable + can be prepared on a grill pan on the stove top.
This is my go to when I'm not sure what to make for dinner. Grill these up quickly with a salad, burger buns, corn or baked beans...or all of the above.
Replace the honey with brown sugar - so much good caramelizing happened with the sugar, salt + spices...you will be eating more chicken I promise you!

Our Favorite Chili Lime + Honey Grilled Chicken Thighs
6-8 boneless skinless chicken thighs
2 tablespoons honey
1 heaping tablespoon chili powder
1 teaspoon smoked paprika
1 teaspoon garlic powder
1 teaspoon onion powder
1 teaspoon dried oregano
zest of 1 lime - save the lime for garnish + juice at the end
1/2 teaspoon salt
1/2 teaspoon pepper
1 pinch red pepper flakes
Heat your grill to high heat.
On a sheet pan or cutting board, arrange the chicken thighs on a single layer. Drizzle the honey all over the thighs.
Combine the remaining ingredients + sprinkle on both sides of the chicken thighs - use up all the spice blend.
When your grill is hot, place the thighs around your grill in a single layer. Grill on the first side for 4-5 minutes. Flip over + cook for another 4-5 minutes or until the thighs are just cooked thought. Remove from the grill + let rest.
Garnish with a squeeze of lime juice. Serve warm.
