Olive Salsa Baked Salmon
Phew - who else needs a super fast, easy + tasty meal?
If olives are involved - I'm IN! I love the salty meaty little nuggets - along with ripe roma tomatoes, red onion, fresh herbs + salted salmon - it's a match!
It's seriously so quick to put together. I love how fast it cooked up in the oven (1 pan meal!!) + there is extra salad to pile on high. Add in some sauteed spinach + rice - it's a meal, filled with salt, flavor + delicious salmon!

Olive Salsa Baked Salmon
4 salmon steaks
1/2 teaspoon black pepper
1 pinch of salt
2 roma tomatoes, diced
1 tablespoon red onion, chopped finely (optional)
1 cup mixed pitted olives, roughly chopped
2 tablespoons oil, from the olives
1 scallion, chopped
1 small handful fresh parsley, chopped
Preheat your oven to 425F. Line a baking sheet with parchment paper.
Arrange the salmon steaks, skin side down on the parchment paper on the baking sheet. Sprinkle with black pepper + salt.
When the oven is at temperature, bake for 8-12 minutes or until the salmon is cooked in the center to your likely. I prefer mine on the medium rare side so I pull mine out at 10 minutes.
While the salmon bakes, mix the remaining ingredients in a small bowl.
Remove the salmon from the oven + top immediately with the olive salsa mix.
Serve along side of vegetables, rice or a salad.
