Mint + Sesame Seared Sugar Snap-Peas

Sesame + Mint go together like...well, they go surprisingly well together. The earthy sesame oil followed up with a bit of fresh mint - all that crunch from the snap peas + charred shallots. It's the perfect side for those looking for something quick, easy + delicious - and GREEN!

The flavor of sugar snap peas are SO good raw - right off the vine, but seared in a super hot pan brings their natural flavors out even more. Plus, I'm all about anything cooked in sesame oil!

This vegetable side has it ALL. Crunch, spicy, flavor + it takes less than 5 minutes to make. YES, less than 5 minutes. Crazy talk!

Mint + Sesame Seared Sugar Snap-Peas

2 tablespoons sesame oil

2 shallots, cut in 1/3's

2 cups fresh sugar snap peas, cleaned

1/2 teaspoon black sesame seeds

fresh mint leaves

Using a cast iron pan (or heavy duty pan that heats evenly), heat the oil over high heat. When the pan is smoky hot (literally smoking), add in the shallots + snap peas. Let sit in the pan for 40 seconds before tossing or flipping over.

Using a spatula or wooden spoon, stir around for 3-5 seconds + let sit again for 40 minutes seconds. Turn the heat off.

Sprinkle with the black sesame seeds + fresh mint. Serve + enjoy!
