Mexican Style Smoked Paprika Chicken Mason Jar Salad with Black Bean Salsa + Cilantro Lime Dressing

Long a** title BUT hey, I love to highlight the highlights!


Aren't these SO good to look at? I mean, not only do they look pretty all meal prepped in your refrigerator but they are packed with protein, nutrition for a fabulous lunch or dinner + give you the peace of mind that you don't have to worry about a meal ALL WEEK!


I love a good roast chicken + smoked paprika rub + a cilantro lime dressing....PLUS all the salad ingredients, well it's a good one.


Make this on Sunday night, so you have lunch for the whole week. It takes the thinking out of it + you stay on track with healthy eating!

Mexican Style Smoked Paprika Chicken Mason Jar Salad with Black Bean Salsa + Cilantro Lime Dressing

This makes 5 large mason jar salads


4 boneless chicken breasts

2 tablespoons smoked paprika

salt + pepper

1 can black beans, drained + rinsed with cold water

1 cup corn (either canned or frozen + thawed or fresh)

3 cups cherry tomatoes, sliced in half

4 scallions, chopped

1 small radicchio, rough chop

2 large romaine lettuce hearts, rough chop

5 16 oz. wide mouth mason jars, with lids


Cilantro Lime Dressing

1 cup olive oil

2 tablespoons apple cider vinegar

1 large bunch a cilantro, about 1 1/2 cups

1 garlic clove

1 tablespoon honey

2 scallions

1-2 limes, juice

1 pinch each salt + pepper


*Add 1/2 coconut milk, yogurt or sour cream to the blender to make it a creamy dressing.


Using a high powdered blend. Add all the ingredients + pulse to combine. When all ingredients are chopped + combine, transfer it to a glass storage container.


Preheat your oven to 425F. On a baking sheet tray, place the chicken breasts. Sprinkle the smoked paprika + a pinch of salt + pepper, per chicken breast. Roast for 12-14 minutes or until the chicken is cooked through. Remove from oven + let cool. When cool enough to touch, shred the chicken with your hands or with two forks.


In a small mixing bowl, combine the black beans, corn, tomatoes + scallions.


To assemble the salads, add the black bean mixture to the bottom of the jars. Top with the shredded chicken. Add the radicchio + then the romaine.


Enjoy within 5 days.
