Honey Chili Lime Chicken Skewers

In these times, delicious yet fast + healthy meals are what we are looking for....enter these skewers.

Um, honey + chili + lime...SOOO good! I also love how using chicken thighs adds more flavor + using a super hot grill always helps.

These came together so quickly. Sprinkle the rub + honey on top the skewers + grill until cooked through. Always drizzle more of the chipotle honey on top when serving.

Amazingly simple + quick recipe for any day of the week - let's get started!

Honey Chili Lime Chicken Skewers

8 boneless skinless chicken thighs, cut in half

8 wooden skewers

2 tablespoons chili powder

1/2 teaspoon smoked paprika

1/2 teaspoon ancho chili powder

1/2 teaspoon real salt

1/2 teaspoon cumin

3 tablespoons honey

1 lime, 1/2 zest, 1/2 juice

Preheat your grill to high heat.

Using one skewer at a time, add 2-3 chicken thigh pieces to each skewer. Arrange on a baking tray. Mix all the spices together in a small bowl. Using a teaspoon or your fingers, sprinkle the spice blend over both sides of the chicken. When all the spices have been used. Drizzle 2 tablespoons on honey on top. Squeeze the lime juice over the chicken + sprinkle with the zest.

When your grill is super hot, add the skewers, Cook for 4 minutes on the first side with the grill cover closed. Flip over and turn the heat down slightly + cover the grill. Cook for another 4-6 minutes or until the chicken is just cooked through.

Remove + place on a platter or plate. Drizzle the remaining honey on top + serve.
