Healthier Gluten Free Sesame Chicken with Peanuts

Guys, we haven't order take out in a long time. The other night I text my husband, asking him to pick up some on his way home from work. Then I looked in our refrigerator + saw these chicken breasts starring back at me. SO I made one of our favorites at home, instead of picking up take out.


It is simple. I had all the ingredients in my pantry. Healthier - because I know what all the ingredients are + it's gluten free - so our guts all felt good.


Bring out your chop sticks + have some fake out take out!


Healthier Gluten Free Sesame Chicken with Peanuts


4 chicken breasts, cut into small bite sized pieces

1 heaping tablespoon tapioca flour (leave this step out if you don't have it)

2 tablespoons sesame oil, divided

2-3 garlic cloves, chopped

1 tablespoon fresh ginger, chopped

1/2 cup coconut aminos

3 tablespoons honey

1 heaping tablespoon chili sauce

1/2 teaspoon fish sauce

1/2 cup roasted peanuts

1 tablespoon sesame seeds

3-4 scallions, chopped

hot sauce


In a medium sized mixing bowl combine the chopped chicken + the tapioca flour. Toss to coat.


Using a small sauce pot, add in 1 tablespoon sesame oil + the chopped garlic. Saute for 1 minute over medium/low heat. Watch it so the garlic doesn't burn. Add in the ginger, coconut aminos, honey, chili sauce + fish sauce. Bring to a slow boil + stir occasionally. Cook until the sauce becomes thick + reduces by 1/3. Remove from heat + set aside.


In a large heavy duty pan (cast iron works great), heat the remaining 1 tablespoon of sesame oil over high heat. When the pan is smoking hot, add the chicken. Spread it out to form 1 layer. Let cook for 3-4 minutes without stirring or flipping the pieces over. When they are browned turn them over + mix until all the chicken is fully cooked.


Turn the heat to low + add the sauce. Toss everything together so the chicken is coated with the sauce. Turn the heat off + let sit. Garnish with peanuts, sesames seeds + scallions. The longer it sits the better the sauce coats the chicken.


Serve this with rice noodles, jasmine rice or tons of roasted vegetables!
