Grilled Romaine Salad with Blue Cheese & Yellow Tomatoes

1-2 tablespoons olive oil

1 head of romaine lettuce, washed, dried, cut in half with the root end in tact

salt + pepper

1/4 cup (or more) crumbled blue cheese

1 handful yellow cherry tomatoes

Heat your grill on high heat. Using a sheet pan, arrange each half of lettuce and drizzle the olive oil on top. Massage with your hands so that it coats most of the lettuce - remember to turn over so that both sides are coated. Sprinkle with salt + pepper (do both sides of lettuce).

When your grill is hot, add lettuce and put the lid on for 1 minutes. Open the grill and flip the heads of lettuce over - close the lid again for 1-2 minutes or until the lettuce begins to wilt and char.

Remove the lettuce to the sheet pan and right away sprinkle with the blue cheese and tomatoes.
