Gluten Free Mini Chip Banana Bread with Maple Syrup

It's Tuesday and we ALL need some banana bread! Let's do it. I used real maple syrup, coconut milk, dairy free chips and coconut oil - makes you feel better eating good ingredients while indulging! Give me a second piece. Thanks to @cookieandkate for this amazing recipe.

Gluten Free Mini Chip Banana Bread with Maple Syrup


1/3 cup melted coconut oil

½ maple syrup

2 eggs, room temperature

3 ripe bananas

¼ cup coconut milk

1 teaspoon baking soda

1 teaspoon vanilla extract

½ teaspoon salt

1 teaspoon cinnamon

1 ¾ cup gluten free flour blend (I used Bob Red Mill)

½ mini chocolate chips *I used Enjoy Life semi sweet dairy free chips


Preheat oven to 325 degrees. Grease a loaf pan.


In a large mixing bowl, beat together oil and honey. Add eggs, bananas and milk. Mix on medium for 20 seconds. Add baking soda, vanilla, salt, cinnamon and flour. Mix to just combine – don’t over beat. Add chocolate chips – if desired – fold in with a spoon.


Bake for 65 minutes. Check with a toothpick or knife for doneness. I cook mine for another 15-20 minutes. Let cool for 10 minutes in the pan. Remove the bread from the pan and let cool longer if you can before slicing into.
