Gluten Free Brown Butter Blondies with Dark Chocolate + Butterscotch
When a recipe has 11 tablespoons of BUTTER - you KNOW it's going to be good. I mean for real!!!
I've made these a few times - the brown butter gets me every time. I love the richness of the brown sugar, along with my favorite gluten free flour blend + chocolate chips...AND MORE sprinkled on top!
While, certain individuals in my house love sweets - this was perfect for them - I love a tiny bite here + there. These are sweet! They remind me of the Coconut Butterscotch Magic Bars I made around the holidays...SWEET!
And finally to satisfy everyone in my house - I added more chocolate on top to one side + butterscotch on the other. So everyone is happy. Do you love butterscotch, like I do? Gosh, give it ALL to me.

Gluten Free Brown Butter Blondies with Dark Chocolate + Butterscotch
11 tablespoons, divided in half, room temperature
1 1/2 cups packed brown sugar
2 large eggs, room temperature
2 teaspoon vanilla paste or extract
1 3/4 cup gluten free flour blend
1 teaspoon baking powder
1/4 teaspoon baking soda
1 cup chocolate chips, plus more for topping
(If desired) 1/2 cup butterscotch chips for topping
Preheat your oven to 350F. Place parchment paper in a 13x6 baking pan + set aside.
In a small saucepan, melt 5 1/2 tablespoons of butter. Swirl around + cook until it is toasted brown. Add in the brown sugar. Quickly stir to combine. Make sure not to burn it + remove it right away from the stove.
Using a mixing bowl, combine the browned butter, brown sugar + the remaining room temperature butter. Mix with a rubber spatula or wooden spoon until combine. Add in the eggs, one at a time. Mix until everything is just combined. Stir in the vanilla.
Add the flour, baking powder + baking soda to the butter + sugar bowl. Stir until just combined. Stir in 1 cup chocolate chips.
Pour the batter into the prepared pan + spread evenly.
Bake for 15-18 minutes or until the center is cooked through. Remove from the oven. Sprinkle some chocolate chips + butterscotch chips on top (if desired) + cool on a wire rack. Cut into bars + serve.
