Ginger + Chili Pork Mini Meatballs with Stir Fry Sesame Baby Broccoli

1 teaspoon coconut oil (or cooking oil of your choosing)

1 lb. ground pork

1/2 teaspoon sea salt

1/2 teaspoon black pepper

2 heaping tablespoons fresh ginger, chopped (about a 2 1/2 piece)

1 tablespoon arrowroot powder or tapioca

3 tablespoons sweet chili sauce

1 tablespoon sesame oil

8-12 stems of broccoli (baby, broccoli or florets work all the same)

1/2 teaspoon sesame seeds

1/2 teaspoon hot sauce

fresh scallions + cilantro for garnish, chopped

Heat the cooking oil in a non stick skillet over medium heat.

In a mixing bowl, combine the ground pork, salt, pepper, fresh ginger + arrowroot powder.

Using a round teaspoon, scoop some of the meatball mixture. Form it into a ball - I think using your hands works best. Repeat until all the meat is in mini meatballs.

When the skillet is heated, add the meatballs, leaving a little space between each of them. Let them cook (without touching or flipping over) for 3-4 minutes or until golden brown. Flip over + turn the heat to low. Let them cook another 3 minutes. Remove from the pan + place in a shallow bowl.

Spoon the chili sauce over the top + garnish with cilantro.

While, the meatballs cook on the first side, start the broccoli. Heat another skillet over high heat with the sesame oil in it. When the pan is hot, add in the broccoli carefully. Let sit for 2-3 minutes + then toss. Cook for another 2-3 minutes + remove from the heat.

Garnish with sesame seeds.

Serve together with wonton crisps, rice + hot sauce.

Enjoy!
