Garlic Basil Ranch Dressing - Vegan

I made this for a client today and I rushed home to make it again for ME!

Gosh, I love ranch dressing. And what I love about this recipe is that its PALEO and VEGAN. It's easy on my stomach so I can have more and more! PLUS I always love using fresh herbs and garlic in about any dish.

It will last in your refrigerator for at least 1 week - or more - but you will probably enjoy it before then!

*Tip: make this before you actually need it. Chill it in a glass container in the refrigerator - it will thicken up nicely after about 1 hour...plus the flavor blend more and it tastes even better.

Garlic Basil Ranch Dressing - Vegan

1 can full fat coconut milk

1/2 cup avocado mayo (I love Primal Kitchen's)

1 large handful fresh bail

2 scallions, roughly chopped

2 tablespoons fresh dill

juice of 1/2 lemon

1 garlic clove

1 large pinch of salt & pepper

Add everything into a food processor or blender. Blend until smooth and herbs are chopped up and combine. Store in a sealed glass container.
