Everything Birthday Party Cookies

I love samoas girlscout cookies! LOVE LOVE LOVE them! BUT I didn't have any...SO, you make them.

So in order to make them, without all the steps, no hole in the middle but a similar taste + gluten free - these were born. Close your eyes + they are them.

The toasted coconut, creamy chocolate + gooey marshmallows....they are good. They are very fragile - like fall apart in your hand, so eat them quickly.

I love that these have just brown sugar in them + gluten free flour...kinda makes you feel better about eating these for lunch. Whoops, yes that happened yesterday - BUT heck, it was my birthday, so it was a party all day!

Everything Birthday Party Cookies

Inspired by Rusty Joyful Food's Sticky Marshmallow Toffee Cookies

1/2 cup light brown sugar

1 cup salted butter, softened

1 teaspoon vanilla extract

2 eggs, room temperature

1 pinch sea salt

1 pinch cinnamon

2 1/4 cups gluten free flour blend (I used Bobs Red Mill)

1/2 teaspoon baking soda

1 1/2 cups semi sweet chocolate chips

1/3 cup unsweetened coconut flakes

1/2 cup mini marshmallows

Maldon Flake Salt

Preheat your oven to 350F. Line a baking sheet with parchment paper.

In a medium mixing bowl, mix together the sugar + butter with a spatula. Add the vanilla extract + 1 egg. Mix to combine + add the other egg. Add the salt, cinnamon, flour blend + baking soda. Mix until just combined - don't over mix.

Fold in the chocolate chips, coconut flakes + marshmallows. Using a tablespoon to scoop the cookie batter onto the prepared pan. Add to the oven + bake for 9-10 minutes. Remove from oven + sprinkle lightly with flake salt + let cool on the pan for 1-2 minutes. Once cool, place cookies on a wire cooling rack.
