Easy Beef + Bean Taquitos with Chili Pepper Lime Dip

Check these out. Grab your kids, husbands + dogs! They will ALL love these!


I mean the crispy shells are OFF THE CHARTS.


The beef + beans are tender with melted cheddar cheese. Dip them into the chili pepper lime dip - double dip is okay by me! You will want it!


So good + simple...PLUS it's a fun meal to have to start this week off!


Easy Beef + Bean Taquitos with Chili Pepper Lime Dip


1 lb. ground beef

1/2 yellow onion, small diced

3 garlic cloves, chopped

1/2 teaspoon salt

1 tablespoon smoked paprika

1 teaspoon chili powder

1 teaspoon cumin

1/2 teaspoon onion powder

2-3 scallions, chopped

1/2 cup canned pinto beans, drained

3/4 cup shredded cheddar cheese

12 corn tortillas

Olive oil

1/3 cup dairy free sour cream

1 lime, zest + juice

1/2- 1 teaspoon dried red pepper flakes

salt + pepper, to taste


Preheat your oven to 425F.


Using a medium sized skillet, cook the ground beef over medium high heat. Using a wooden spoon or spatula break up the pieces. When the meat is about 1/2 way cooked through, add in the onion + garlic. Mix to combine + continue to cook.


When the ground beef is fully cooked, remove from the heat. Add in the spices - salt, smoked paprika, chili powder, cumin + onion powder. Toss in the scallions + beans. Stir to combine everything.


Warm the tortillas so that they are workable + don't crack when rolled or folded. I have found that heating them in their bag in the microwave for at least 1 minute - works best.


Sprinkle in the cheese to the beef mixture + toss. Drizzle a baking sheet tray with olive oil - about 2-3 tablespoons. Place 3 warmed tortillas on the tray in the oil. Flip over to coat both sides of the tortillas. **Add more oil during the rolling process if needed - you want all the tortillas to be coated - this helps them crisp up nicely. Spoon about 1-2 tablespoons of the meat + bean mixture into the middle of each prepared tortilla. Roll + place on 1 side of the baking sheet tray with the seam side facing down. Repeat until all the meat is in the tortillas + rolled up.


Place the baking tray in the oven + cook for 8 minutes. Remove the tray + carefully flip them over. Cook for an additional 5 minutes or until crisp + browned.


While they cook, mix together the sour cream, lime juice, lime zest + chili flakes. Add in a pinch of each salt + pepper. Serve along with the cooked taquitos.
