Coconut Butterscotch Magic Bars

Everyone is making Christmas cookies SOOO I'm playing catch up. BUT I think I may score extra points for these. WOW. If you have a sweet tooth, a few small bites will do you. I mean, layers of graham crackers, chocolate, butterscotch and coconut!


Thanks to Nature's Choice Sweetened Condensed Coconut Milk they turned out so good. I loved adding more coconut to this recipe - its rich and delicious.


Love that they are simple to put together and the oven does the rest. Make sure to let them fully cool before you slice into them. I even thought they were better the next day!



Coconut Butterscotch Magic Bars


1 1/2 cups 2 cups Gluten Free Honey Graham Crackers, crumbled (I like this brand)

1 stick butter, melted

1/2 cup milk chocolate chips

1/2 semi sweet or dark chocolate chips

1/2 cup butterscotch chips

1 cup unsweetened coconut flakes

1 11.25 oz can of Nature's Charm Sweetened Condensed Milk


Preheat oven to 375F. Using an 8x12 pan (or similar size) spray with cooking spray (I use this kind). In a mixing bowl, add the crumbled graham crackers and melted butter. Mix to combine. Pour into the pan and press down to form the crust. Now layer the remaining ingredients, one at a time. First the chocolate chips, the butterscotch and then the coconut flakes. Pour the condensed milk over the top. Using a rubber spatula, smooth out the milk making sure the top is fully covered with it.


Place in oven for 25 minutes. Remove from oven and let cool on a cooling rack. Let cool for at least 45 minutes or longer. Transfer to a cutting board and slice. Enjoy!
