Coconut Aminos Salmon with Herbs & Mushrooms

After all that turkey and stuffing, I'm ready for some fish and greens!


This is by far the easiest salmon recipe - plus you make it all in one pan and it uses coconut aminos which is so full of flavor and doesn't need anything else, besides garlic...ALWAYS garlic.




Coconut Aminos Salmon with Herbs & Mushrooms

Made Paleo with Coconut Oil


2-4 filet of Salmon

4 tablespoons coconut aminos - separated

1 tablespoon coconut oil

1 package of sliced cremini or baby bella mushrooms

2-3 garlic cloves, minced

1/4 cup fresh parsley, chopped

4 scallions, rough chopped

1/4 cup fresh cilantro, chopped **optional


Heat over medium high heat the coconut oil in a sauce pan. Meanwhile, marinate the salmon with 2 tablespoons coconut aminos. Pour the aminos on top and massage all around the salmon and let sit.


Add the mushrooms to the heated pan - cook for 1-2 minutes. Spread the mushrooms to the outside of the pan and add the salmon to the middle of the pan so the skin side is facing up. Add the remaining 2 tablespoons of coconut aminos and chopped garlic.


Cook on medium high heat for 3-4 minutes and flip over. Cover the pan with a lid for another 3-4 minutes or until the desired temperature is reached or the color of the center is reached, that you like.


I tend to under cook my salmon. I like mine dark pink in the middle. Remove lid and add herbs.


Serve hot.


*Serve over rice, cauliflower rice or wilted spinach greens.
