Cilantro Pesto Fajita Steaks with Charred Peppers + Onions
Okay, Taco Tuesday is looking a little different. Like many of us - I needed to change up our groundhog day meals - you get me?
Love a simple sauce to go over quickly grilled steaks + charred peppers + onions. It's a really simple meal, that tastes amazing - thanks to the cilantro pesto. Plus the colors are crazy good!
I served these on a board. Hot off the grill. Everyone picks what they want. Add as much toppings, extra sauce + herbs you want. Don't forget the grilled tortillas, hot sauce + any extra pine nuts!

Cilantro Pesto Flat Iron Steaks with Charred Peppers
1 tablespoon olive oil or coconut oil
3 peppers, assorted colors - seeds removed + sliced
1/2 yellow onion, sliced
1/2 teaspoon smoked paprika
1/2 teaspoon cumin
3-4 Flap Meat Steaks, room temperature
1/2 teaspoon each salt + pepper
3 heaping tablespoons (or more) Cilantro Pesto, recipe to follow
Serve with warm tortillas
Heat a grill pan or grill to high heat. In a medium sized bowl, toss the sliced peppers + onions with the smoked paprika, cumin + a pinch of each salt + pepper. Add to the grill or grill pan when it is hot. Let sit for at least 2 minutes to char up nicely. Flip over using tongs to cook the other side. Remove after 1-2 minutes to a platter or cutting board.
Sprinkle all sides of the flap meat steaks with the salt + pepper. Add the steaks to the same grill pan or grill over high heat. Let the steaks cook on their first side for 3-4 minutes + then flip over. Cook on the second side for not more than 4 minutes. I took ours off at 3 minutes. Let rest on a cutting board.
Thinly slice the steaks. Serve with cilantro pesto, pepper + onions. Blanket everything with warm tortillas + your favorite salsa + hot sauce.

Cilantro Pesto
1 large bunch fresh cilantro, stems trimmed
2 tablespoons olive oil
2 garlic cloves
1 pinch red pepper flakes
1 pinch each salt + pepper
1/3 cup nuts (I used a combination of walnuts + pine-nuts)
Reserve some nuts for garnish
Add all ingredients into a food processor or blender + blend until combine + chopped up.
