Chipotle Lime Roasted Cauliflower + Broccolini

I love the heat + depth of flavor that chipotle peppers have - plus the added adobo sauce, fresh lime + scallions are so good. Roasted cauliflower + broccolini are easy + give them tons of flavor. They are crunchy yet tender + sweet from the hints of honey.

This doesn't get any simpler + easier to make. For real. Mix in 3 ingredients with the vegetables. Roast + chow down. Yes, easy.

Chipotle Lime Roasted Cauliflower + Broccoli

2 tablespoons coconut oil, melted

1 bunch of broccolini (estimated 8 stalks), chopped into large bite sized pieces

1 head of cauliflower, chopped into large bite sized pieces

2-3 tablespoons canned chipotle pepper in adobo sauce

2 teaspoons good quality honey

salt + pepper, to taste

2 limes, zest + juice

4 scallions, chopped

Preheat your oven to 400F.

Pour the melted coconut oil all over a baking sheet tray. Place the broccolini + cauliflower on the tray. Add the chipotle peppers with adobo sauce + honey over the vegetables. Mix with your hands or tongs to coat everything. Roast for 8-10 minutes or until the vegetables are tender + slightly browned on the bottom.

Remove from the oven. Sprinkle with pinch of salt + pepper + lime zest. Drizzle the lime juice all over. Garnish with chopped scallions. Toss to combine everything + serve at once.
