Chipotle Honey Sweet Potatoes

When vegetables are candy - you know you have something good. I love the combination of honey + chipotle - yet again, the spicy + sweet rules. Don't forget about the smoked paprika - love the smoky flavor with naturally sweet potatoes. It's a good one.

Oven roasted sweet potatoes are not only easy to prepare - the oven basically does the work - but they are soft + delicious inside with some crunch on the outside...

Oh that honey drizzle!

Chipotle Honey Sweet Potatoes

1/4 cup coconut oil, melted

3-4 sweet potatoes, cut into bite sized pieces

1 teaspoon chipotle powder

1 teaspoon smoked paprika

1/4 teaspoons cumin

1 teaspoon sea salt

2-3 tablespoons high quality honey

garnish with fresh cilantro

Preheat your oven to 425F.

Combine everything from coconut oil to sea salt (except the honey + fresh cilantro) on a sheet tray/pan. Using your hands works best but a wooden spoon would too. Make sure the sweet potatoes are all coated. Spread them out so they are all on one even layer. Drizzle 1 tablespoon of honey over the top of the potatoes.

Roast for 15 minutes. Check to see if they are tender in the center - if not, roast for another 5 minutes.

Remove from oven. While still hot, drizzle the remaining honey on top + garnish with fresh cilantro. Serve warm...try to resist any taste tests!
