Chipotle Chili & Maple Apple Spiced Cashews

2 cups whole roasted cashews with salt 1 pinch of chipotle chili power 1 teaspoon apple pie spice 1 pinch of kosher salt 4 tablespoons real maple syrup

Line a baking sheet with parchment paper and set a side.

In a small stockpot, heat the cashews over medium heat for 2 minutes to toast them. Watch them carefully as they can easily burn. Turn the heat to low and add the remaining ingredients. Stir to combine – the maple syrup should bubble when it hits the pans. Cook for 2 minutes on low heat, stirring occasionally. Turn the heat off and pour cashews onto the baking sheet with parchment paper. Spread out so they aren’t in a pile and let cool. The sugar in the maple syrup will harden once they are completely cooled. Break into little clusters of love.

Store in an air tight glass container, freeze or enjoy right away.
