Cashew Garam Masala Chicken Salad + Arugula Naan Sandwiches

Any excuse to make a sandwich - even with naan - AND I'm in. These are so cute + delicious. I used mini naan breads + piled them high with the tender + luxurious garam masala chicken. Cashews, scallions, red pepper flakes + fresh cilantro make the dish unforgettable.

This is basically the easiest meal prep recipe for amazing lunches. I put this salad with extra arugula + spinach along with serving it with these mini naan breads. Toast your favorite bread + pile it on...it's really good on it's own too!

I use avocado mayo in this recipe - and to be honest, it's the only mayo that I buy. It's good for my gut + tastes great. Primal Kitchen does it right without adding sugar, using gluten or dairy or canola oil - all of these are important to me. I don't like all the added STUFF. If you haven't tried it yet, I would recommend it. If it's not your cup of tea - use what you love.

Don't want to grill chicken just for this recipe - this is a great use of store bought prepared rotisserie or grilled chicken. I have seen it at my local Whole Foods store + a few others. Such a quick way to meal prep.

Cashew Garam Masala Chicken Salad + Arugula Naan Sandwiches

1 cup avocado mayo

1 teaspoon apply cider vinegar

1 teaspoon garam masala spice

1/2 teaspoon cumin

1/2 teaspoon red pepper flakes (less for a more mild taste)

1/2 teaspoon turmeric

1/2 teaspoon ground ginger

1/4 teaspoon ground garlic

1/2 teaspoon ground black pepper

1/2 teaspoon salt

1/2 cup roasted + lightly salted cashews, broken up into small pieces

1/2 cup fresh cilantro, chopped

2 scallions, chopped

2 cooked chicken breasts, grilled, baked or rotisserie - cut into bite sized pieces

1 carrot, shredded, grated or peeled

1-2 handfuls of fresh arugula

naan, bread or extra greens for serving

In a medium mixing bowl, combine all the ingredients from mayo to chicken. Toss well until its fully incorporated together.

When serving as a sandwich with naan - heat the naan up slightly, place a small handful of arugula + carrots on one side of the bread. Place a heaping tablespoon + a little more on top. Fold + enjoy!

Reserve any extra in an air tight container for 2-3 days.

Serve with extra hot sauce, cilantro + cashews to garnish.
