Brown Sugar Roasted Acorn Squash

It's no secret that brown sugar + melted butter are a match made for many delicious things. Tender squash baked to perfection + topped with salt, brown sugar + butter. It's simple + delicious.


I often make this for just ME - and eat it all! So good.

Brown Sugar Roasted Acorn Squash


1 acorn squash, cut in quarters + seeds removed

2 tablespoons olive oil

1/2 teaspoon salt

3 tablespoons salted butter

2 tablespoons brown sugar


Preheat your oven to 400F.


Drizzle a baking sheet tray or baking dish with olive oil. Place the squash facing down on the baking tray. Bake for 12 minutes. Check with a fork to see if they are tender. Flip them so they brown on the other side of the flesh. Bake for 12 more minutes + remove from the oven.


Place the squash face up on a serving tray or plate + sprinkle with salt. Add a small amount of butter to each "bowl" of squash + sprinkle with the brown sugar.


Serve + Enjoy!
