Brown Sugar Aminos Chicken Skewers

When 2 ingredients equals a marinade, well, I'll be making it over + over again! Grilling these skewers is fast + easy - leaving the chicken juicy, moist + full of flavor. Top with sesame seeds, saute some vegetables + coconut rice! It's a meal!

I was bummed that I was completely out sesame oil - BUT happy to have liquid aminos to provide the salty + rich flavor + sweetness from the brown sugar, that I was looking for. AND when grilled, the salty + sugar, caramelize nicely + lock in all the delicious flavors.

It's a simple recipe that doesn't skimp on flavor - great any day of the week recipe! Try it!

Brown Sugar Aminos Chicken Skewers

2 heaping tablespoons brown sugar

1/3 cup liquid aminos (or soy sauce)

8 Chicken thighs, sliced in half length wise to form strips for the skewers

8-10 wooden skewers

1/2 teaspoon sesame seeds

In a mixing bowl, combine the brown sugar, liquid aminos + sliced chicken thighs. Toss to coat, cover + let sit in the refrigerator for up to 1 hour.

Heat your grill to high heat. Using one skewer at a time - weave the chicken in + out along the skewer - about 2 pieces per skewer. Do this until you have used all the chicken.

When your grill is hot, place the skewers in a single layer on the grill - giving each one about 1-2 inches between each other. Grill for 4 minutes on the first side then flip over for another 4 minutes or until the chicken is just cooked through. Remove the chicken to a platter or cutting board.

Sprinkle the sesame seeds over the chicken + serve.

Great with grilled or sauteed vegetables!
