Broccoli Crunch Salad with Figs + Bacon

I absolutely love this salad. Raw broccoli is coated with a simple lemony mayo based dressing - with the bite of apple cider vinegar. I love the crispy bacon bites + the soft + chewy figs. The pops of red onion + crunchy sunflower seeds. Gosh, it's a good one!

It's even great the next day - but I doubt it will last that long. Meal prep this for lunch or a quick dinner side.

Broccoli Crunch Salad with Figs + Bacon

1 large broccoli head, rinsed + cut into small bite sized pieces

4 thick cut slices bacon, chopped + cooked until crispy

2 tablespoons raw or roasted sunflower seeds

4 figs, chopped

1 tablespoon red onion, minced

1/2 avocado mayo

1-2 tablespoons apple cider vinegar

1 teaspoon poppy seeds

1 pinch salt

1 pinch pepper

zest of 1/2 lemon

In a medium sized bowl, place the broccoli, bacon, sunflower seeds, figs + red onions.

Using a small bowl, make the dressing. Combine the mayo, vinegar, poppy seeds, salt, pepper + lemon zest. Using a fork or small whisk, combine all ingredients together.

Pour the dressing over the bowl of broccoli. Toss with tongs or a spoon to coat the broccoli with the dressing + to combine all ingredients.

Serve at once or let sit over night for more developed flavors. Enjoy within 3 days.
