Blue Cheese Smashed Sheet Pan Potatoes

I wasn't sure if this was even a recipe BUT it is + it's as SIMPLE as it gets.

Buttery potatoes then smashed + sprinkle with blue cheese + scallions.

They are a great side dish for a crowd or even just you! I love the salty potato skins with the buttery middle....thyme + blue cheese is ALWAYS a good choice!

Blue Cheese Smashed Sheet Pan Potatoes

1 lb. baby yukon gold + red potatoes

2 tablespoons olive oil

1 tablespoon butter

1/2 teaspoon salt

1/2 teaspoon pepper

1/2 teaspoon dried thyme

1/2 cup blue cheese crumbles

1-2 tablespoons fresh scallions, chopped

Preheat your oven to 425F.

Using a sheet pan, add the potatoes, olive oil, butter, salt + pepper. Roast for 12 minutes or until they are softened + brown.

With the bottom of a mug, glass or measuring cup, press each potato down slightly until it pulled apart + is smashed. Add back to the oven for 2-3 minutes.

Remove from the oven + sprinkle with the thyme, blue cheese + scallions.
