Bacon + Shallot Balsamic Jam Haricots Verts

These Haricot Verts with bacon are a must. Caramelized shallots with a splash of balsamic would be good on toast - but even better over crunchy + fresh green beans.


Its a simple side dish for any meal. Don't scramble to figure out an easy vegetable side. Make the bacon jam ahead of time + heat up with the greens when you are ready to serve.


I picked up a 12 oz. bag of Haricots Verts from my local Trader Joe's. I know other grocery stores carry them as well. If you can't find them, don't fret. Regular green beans work great. Pick through them to find the best ones + trim the ends.



Bacon + Shallot Balsamic Jam Haricots Verts


4 slices thick cut bacon, cut into small pieces

4-5 large shallots, sliced thinly

1/4 cup water

1 tablespoon balsamic vinegar

1/3 cup coconut sugar (or brown sugar)

1 pinch of each salt + pepper, plus more for seasoning

12 oz. Haricots Verts, cleaned + trimmed - if needed


Using a heavy duty pan, cook the cut up bacon until crispy. Remove the bacon from the pan with a slotted spoon + set aside. Discard all but 1 tablespoon of bacon grease. Return the pan to low heat.


Add in the shallots. Break up using a wooden spoon or tongs. Cook for 8 minutes; stirring occasionally. After 8 minutes, pour in the 1/4 cup of water. Stir to combine. Cook for another 3 minutes or until the shallots are browned + caramelized.


Meanwhile, boil water in a medium-sized pot with 1/2 teaspoon of salt in it. Blanch the Haricots Verts for 4 minutes in the boiling water. Drain + let sit until the jam is ready.


With the heat still on low, add in the balsamic vinegar + sugar. Toss to combine. Cook for 2 minutes or until the sugar is dissolved. Add in the salt, pepper + bacon. Mix to combine. Turn the heat off + remove the jam from the pan to a bowl.


Quickly wipe the pan clean with a towel. Return the pan to your stove + heat on high heat. When the pan is hot, add in the drained Haricots Verts. Let sit for 2 minutes + then toss. Do this for 4-6 minutes total.


Place the Haricots Verts on a serving plate or shallow bowl. Top with the jam. Sprinkle with a little salt + pepper + serve.
