Bacon Brussels Sprouts with Apples & Pomegranates

Fall on a plate...Bacon Brussels Sprouts with Apples & Pomegranates. A dinner side that is ready in under 10 minutes while everything else cooks...and all your guests or just you and you kids will love - because the crunch of the apple, salty deliciousness of bacon and the pop of the pomegranate..OH don't forget the brussels sprouts. Either cook this on a sheet pan in the oven or quickly on the stove top...enjoy when hot!



Bacon Brussels Sprouts with Apples & Pomegranates


4 -6 strips thick cut bacon, chopped

4 cups brussels sprouts, quartered

1 honeycrisp apple, chopped

1 teaspoon dried thyme

1/2 cup pomegranate seeds (about 1/2 of a whole)

salt & pepper, to taste


Cook bacon until crispy in a saute pan. Remove bacon and set aside in a small dish. Keep any bacon grease in the pan. Over medium heat, add brussels sprouts to pan and saute for 6 minutes, stirring occasionally. When they are tender or starting to get brown, add the chopped apples, thyme and pomegranate seeds. Mix to combine. Sprinkle with salt and pepper. Taste and add more if desired.


Serve warm. Enjoy!
